Welcome to The Upstate Chef
Hi there!
My friends and family were ride or die through ALL of it. The good, the great, and the truly, deeply questionable. You know that episode of Friends where Rachel puts beef in the trifle? Hi, it’s me. I’m Rachel. What I will say is that the people who love me are very loyal and very brave, and I am grateful for every single one of them.
Here's what all of those years of obsessing and experimenting taught me. Cooking incredible food is so much more approachable than the world wants you to think it is. You don't need culinary school. You don't need fancy equipment. You don't need a whole Saturday afternoon. You just need to understand flavor, trust the process, and not be afraid to make a mess.
And now? Now I'm a parent. A working parent with kids, a packed schedule, a to-do list that never actually ends, and a deep, unwavering refusal to let any of that be an excuse for a boring dinner. Because I know you're right there with me. Getting home late, kids hungry, brain completely fried…and I know you don't want to order pizza again either. You want something real. Something that tastes incredible. Something that doesn't make you feel like you're cutting corners, even when technically, a little, you kind of are. And girl, I got you.
This whole space exists for you. The working parent who loves food, loves their family, and refuses to sacrifice flavor just because life is busy. Every single recipe I share is something I've made in my own kitchen, for my own family, on a completely normal weeknight. No fluff, no fuss, no ingredients you've never heard of. Just really, really good food that's fast, nutritious, and genuinely fun to make.
I'm going to share everything I know with you. Every trick, every shortcut, every flavor secret I've picked up along the way. Think of this as your kitchen best friend who also happens to be slightly unhinged about herbs and will never, ever let you settle for a sad meal.
So let's do this. I'm so happy you're here.
Mangia!
Hey, I'm Caroline. Come on in! I'm so glad you found me.
Okay, so here's the thing. I did not grow up in a house that smelled like Sunday roast and fresh baked bread. Not even close. I grew up with a single mom who was working absolutely everything she had just to keep us afloat, and by the time dinner came around, the woman had nothing left in the tank. And honestly? Good for her. She was a superhero. But a cook she was not, and that means little Caroline grew up eating a lot of meals that came out of a box, a can, or a drive-thru window.
But somewhere in there, something clicked. I discovered this deep, genuine passion for food that I honestly didn't see coming. The kind that sneaks up on you and then suddenly it's all you want to talk about at every dinner party. It just lit me up in a way nothing else did. The flavors, the techniques, the creativity of it all. I started hunting down every cookbook I could get my hands on, studying them like textbooks, and for the first time, I felt like I had found something that was truly, completely mine.
I watched the Food Network so religiously during its golden years that I genuinely considered myself a silent competitor on Iron Chef America. I knew every Chairman’s dramatic ingredient reveal like it was my own personal sport, and I absolutely had opinions about who should have won. And then I just started cooking. Throwing things together, experimenting, failing spectacularly, trying again, and slowly but surely figuring out how to get the flavors I was chasing in my head to actually show up on the plate.
