Herby Chicken Thighs with White Beans and Lemon
Tender chicken thighs seasoned with paprika, garlic, and herbs de Provence, seared golden and finished with fresh dill, Italian parsley, leafy greens, and a generous squeeze of lemon. All on top of creamy, herb-soaked white beans. It's affordable, it's ridiculously delicious, and it comes together faster than you'd ever guess. Don't forget the crusty bread. Seriously, don't.

- Preheat oven to 400°
- In a food processor, add herbs, garlic, juice of half a lemon, paprika, a pinch of salt, and 1/4 cup olive oil. Blend until everything is mixed together.
- In an oven-safe pan, heat 1tbsp of olive oil and add chicken. Cook on both sides for 2 minutes each, remove and set aside.
- Add the leafy green of choice, and cook until they wilt.
- Add beans and the remaining olive oil (you can always add more if you need) and mix until well combined.
- Add the juice of the other half of the lemon, mix again. Add herb mixture and mix well, again.
- Re-add the chicken thighs and their juices back into the pan, then pop in the oven uncovered for 20-30 minutes.
- Grab your crusty bread!
