We have had a hell of a time in my house this winter… colds, norovirus, the flu, then just when we thought we were in the clear, more colds. It’s been a rotating cast of tissues, towels, humidifiers, and someone dramatically whispering, “Can you bring me water?” from under a blanket cocoon. And to me, times like these call for a hearty bowl of chicken soup. Not the sad, thin kind from a dented can (no shade, we’ve all been there). I mean the real-deal, steam-fogging-up-your-windows, smells-like-someone-loves-you kind of chicken soup. This chicken soup is the cozy, nourishing classic your winter needs: tender chicken, vibrant vegetables, and a deeply flavorful broth that warms you from the inside out. Comforting, immune-boosting, and endlessly customizable, it’s the kind of bowl that feels like a hug when you need it most.

  1. In a large stockpot, add the chicken, chopped vegetables, and herbs. Cover with water until it’s about 2 inches above the vegetables. (Hold the lemon juice and bouillon for later if using.)
  2. Cover and bring to a boil over high heat.
  3. Once boiling, reduce to a gentle simmer. Keep covered, slightly venting the lid to let steam escape. Simmer for 1 hour.
  4. If using bouillon and/or lemon juice, stir it in just before turning off the heat. Season with salt and pepper to taste.
  5. Remove the chicken and vegetables from the broth. Discard everything except the chicken, carrots, and celery.
  6. Remove and discard the chicken skin. Shred the meat. Chop the carrots and celery into bite-sized pieces, then return all to the broth.
  7. Serve as desired.
